A delicious and unique chicken curry that is sure to tantalize your taste buds. This dish is made with chicken thighs, peanut butter, soy sauce, lemon juice, curry powder, garlic, yogurt, and green beans. It is served over steamed rice and is garnished with green beans and roasted peanuts.

This chicken curry is easy to make and is perfect for a weeknight meal. It is also a great dish to make for guests, as it is sure to impress.

Here is a step-by-step guide:

INGREDIENTS
500gm of chicken thighs
1 onion
1/3 cup peanut butter
1/4 cup of soy sauce
1/4 cup of lemon juice
1/2 cup stock
1tbs of curry powder
1tsp of garlic
A small tub of plain yogurt
1 cup of chopped green beans
Rice

METHOD
In a bowl, mix the curry powder, garlic, peanut butter, soy sauce, and lemon juice, adding a bit of stock at a time so that it makes a runny sauce.
Chop the onion and cut the chicken into pieces. Then, you can fry the onion, stirring for a couple of minutes, before adding the chicken and stirring until the chicken starts to brown.
Add the sauce mixture and continue to stir. Leave it to simmer for a few minutes, stirring occasionally. Add beans and yogurt and stir through. Leave to simmer for a few minutes, until the sauce has a nice consistency.
Serve with steamed rice. If you like, you could garnish this dish with a few green beans and some roasted peanuts.

Additional tips:
- You can use any type of chicken for this recipe, but chicken thighs are best because they are more flavorful.
- If you don't have peanut butter, you can use another type of nut butter, such as almond butter or cashew butter.
- If you want a spicier curry, you can add more curry powder or a pinch of cayenne pepper.
- You can also add other vegetables to this curry, such as carrots, potatoes, or bell peppers.
